Today we are making homemade ravioli filled with creamy cheese and savory mushroom. Ravioli is a classic Italian pasta that wraps filling inside soft dough.

Ingredients We Need

- 1 egg
- 2 g salt

For the cheese filling:
- 20 g mozzarella cheese
- 10 g Parmesan cheese
- 30 g whole milk
- 10 g flour paste
- 10 g fresh parsley, chopped
For the mushroom filling:
- 10 g porcini mushrooms
- ½ onion, finely chopped
- 1 slice smoked meat substitute, chopped
- 25 g unsalted butter
- 4 sage leaves
- Salt and pepper to taste
- Juice from ¼ lemon
For cooking and serving:
- 50 ml chicken broth
- 50 ml mushroom broth
- ½ avocado, sliced
- A small amount of olive oil
Having everything ready helps us avoid rushing during cooking.

Step 1: Prepare the Pasta Dough

We start with the dough because it needs resting time.
1. In a bowl, mix 100 g flour, 1 egg, 2 g salt, and 10 g spinach juice.
2. Stir first with a spoon, then knead with hands for about 8 to 10 minutes.
3. The dough should become smooth, soft, and not sticky. If it feels dry, add a few drops of water.
After kneading, we place the dough in a bowl and cover it with plastic wrap. We let it rest for 30 minutes. Resting allows the gluten to relax and makes rolling easier later.

Step 2: Prepare the Cheese Filling

While the dough rests, we make the cheese filling.
1. Mix 20 g mozzarella and 10 g Parmesan together.
2. Add 30 ml whole milk and stir until smooth.
3. Add 10 g flour paste to thicken the mixture.
4. Stir in 10 g chopped parsley for freshness.
The filling should be creamy and thick. We place it in the fridge to cool. Cooling prevents the filling from leaking when we wrap the ravioli.

Step 3: Prepare the Mushroom Filling

Now we cook the mushroom filling.
1. Heat a pan and melt 25 g butter over low heat.
2. Add ½ chopped onion and 1 slice chopped cured meat alternative. Cook for about 2 minutes until the water evaporates and the aroma develops.
3. Turn the heat to high and add 10 g porcini mushrooms. Cook for another 2 minutes.
4. Add 4 sage leaves and stir gently.
Remove the pan from heat. Season with salt, pepper, and lemon juice. Let the mixture cool completely before using. Cooling keeps the filling firm and easy to shape.

Step 4: Shape the Ravioli

1. Roll the rested dough into thin sheets using a rolling pin or pasta machine.
2. Let the sheet dry slightly on the surface.
3. Place one sheet on a clean table. Add one spoon of filling for each ravioli. Each portion should be about 3 to 6 cm in diameter. Leave enough space between portions.
4. Lightly wet the edges with water.
5. Place another dough sheet on top. Press around the filling to remove air bubbles.
Air inside can cause the pasta to break during cooking, so sealing tightly is important. Cut the ravioli into square or round shapes.

Step 5: Cook and Serve

1. Bring mushroom broth to a boil.
2. Add ravioli and cook for 2 to 3 minutes until they float. Floating means they are ready.
3. In another pan, mix 50 ml chicken broth and 50 ml mushroom broth. Simmer and reduce slightly to create a light sauce.
4. Place the cooked ravioli on a plate. Pour the sauce over them.
5. Add ½ sliced avocado beside the pasta. Drizzle a little olive oil for extra flavor.
Serve immediately while warm. The pasta should feel soft, the filling creamy, and the sauce rich.
